Arctic Char Burgers

  • 16oz Arctic char fillets (skinless)
  • 1 oz Green onion (finely chopped)
  • 2 tbsp Cilantro (finely chopped)
  • 2 tbsp Cajun spice
  • 2 Limes (zest only)
  • 2 Garlic cloves (minced)
  • 3 tbsp Tomato sauce
  • 1 tsp Smoke paprika
  • 1 tbsp Chipotle pepper
  • 4 Egg whites
  • 4 tbsp Bread crumbs
  • Olive oil
  • Salt and pepper

Method – Puree Arctic char in food processer until smooth, transfer into mixing bowl. Add prepared ingredients and mix well and adjust with salt and pepper.  Arctic char should be tested before in sauté pan so that mixture is seasoned to your liking. Arctic char should be portioned evenly to insure even cooking. Shape Arctic char into burgers and pan sear or grill to finish.
