Scrambled eggs with smoked salmon

Scrambled eggs with smoked salmon

  • 3 large eggs or 4 medium eggs
  • 100 ml full cream milk
  • 1/3 cup shaved parmesan cheese
  • 50g smoked salmon
  • chives or parsley, finely chopped
  • freshly cracked fresh pepper
  • 25g unsalted butter
  • 2 thick slices bread (ciabatta, white, focaccia etc)

Method –  Combine eggs and milk in a bowl, melt butter on skillet on low heat until it bubbles, then pour eggs in, stir continuously until it cooks, then pour half the parmesan in, and keep stirring. Turn off the heat, then stir in smoked salmon. Pepper to taste, and serve on toasted bread, top with remaining parmesan and chives.

Creste di gallo with smoked salmon

  • 400g of crestedi gallo or Italian pasta like penne or orecchiette
  • 200g of smoked salmon
  • 2 pieces of bell pepper
  • 3 spoons of olive oil
  • 2 cloves of garlic
  • 3/4 cup of cream
  • 1/2 of spoon of ground pepper
  • basil leaves for garnish

Method –  Cook pasta according to the directions at the package. Heat the oil in the frying pan, add minced garlic, then cubed peppers, fry till peppers are soft. Add smoked salmon, sliced. Add cream, fry 5 min on medium heat till the liquid reduced and sauce becomes more dense. Add ground pepper. Add al dente cooked pasta. Mixed well, served garnished with basil leaves

Zucchini Pasta with SilverFish and Lemon Oil

  • 300g Spaghetti, cooked
  • 4 Fillets of Bass
  • Zest of 1 lemon
  • 1 tsp Crushed Pepper Flakes
  • 1 cup Flour
  • Handful of Freshly Chopped Parsley
  • 1 med Zucchini, julienned
  • 1 cup Dry Vermouth
  • 3 cloves of Garlic, minced
  • 2 small Shallots, minced
  • 1 large Red Chili, chopped
  • Lemon Infused Olive Oil
  • Extra virgin olive oil
  • Sea Salt
  • Black Pepper

Method –  Toss silver fish with salt, flour, half the zest, pepper and pepper flakes. Fry bass in hot oil until crispy, set aside. In a hot pan, saute garlic, shallots and chili in Extra virgin olive oil. Add in zucchini and saute for further 5 mins. Season. Add vermouth and let it reduce for 5 mins. Season. Add in rest of the zest, pasta and parsley, toss. Adding additional Extra virgin olive oil if necessary. Serve on plate with fried bass, drizzle lemon oil.

Fresh Salmon with a crispy top

  • 150 gr. fresh salmon
  • 1 tbsp cornmeal
  • 1/2 carrot, finely shredded
  • 1/2 tbsp fresh parsley, finely chopped
  • 1/2 tsp garlic powder
  • black paper
  • olive oil (optional )
  • salt

Method –   This recipe serves one. Preheat oven to 400°F. Cover a baking pan with a lightly greased cooking paper. Put the salmon into the covered pan. Sprinkle it with a pinch of salt. In a small bowl combine the cornmeal with the parsley, the garlic powder, the black paper and the finely shredded carrot. Cover the salmon with this mixture and brush with olive oil. Cover the salmon with the cooking paper like a pocket. Bake about 30-35 minutes in the preheated oven. Serve warm.

Orange Salmon

  • 2 tbsp of Hoisin Sauce
  • 1 tbsp orange juice
  • 1 tbsp of honey
  • Salt and Pepper (to taste)
  • 4 salmon fillets
  • Optional: Garnish with green onions, orange peel, or thinly sliced oranges

Method –   Turn broiler to high. Rinse salmon and pat dry on paper towel. Lay the salmon on a lined baking sheet (skin side down). Season fish with salt and pepper. In a bowl, mix the first 3 ingredients (to taste if necessary). Coat fish with sauce. Broil fish until slightly burnt or color turns amber (approx 5-8 mins)

Coconut Baked Cod

  • 2 cod fillets
  • 250ml coconut milk
  • 1 tsp tarragon
  • 1 tsp ground coriander
  • 4 mushrooms
  • 6 broccoli florets, chopped in half
  • 1 carrot, sliced
  • 1 tbsp olive oil
  • Couple of lemon slices

Method –  Preheat the oven to 200 degrees C. Pour the coconut milk into an ovenproof dish with the cod. Sprinkle over the herbs. Put the veggies on some foil and drizzle the olive oil over. Close up the foil tightly, leaving a bit of room inside for steam to circulate. Put both the fish and foiled veg into the oven and bake for about half an hour. The fish should be firm and flake easily. Serve with lemon slices.

Tomato Baked Salmon with Steamed Rice Salad

  • 2 salmon fillets
  • 4 cherry tomatoes, sliced
  • 1 tsp basil
  • 100g basmati rice
  • 50g wild rice
  • Small handful dwarf beans, chopped into small bits

Method –  Preheat the oven to 190 degrees C. Rinse the rice a few times and add to a saucepan with about 200ml water. Slowly bring to the boil, then turn the heat right down, cover and leave to simmer for 20 minutes. About halfway through, add the dwarf beans into the pan and re-cover. Meanwhile, sprinkle the basil over the fillets and lay the tomato slices on top. Bake for about 20 mins.
