Spicy shrimp tacos with jalapenos

  • 1 large jalapeño pepper
  • chopped 1 teaspoon chili powder
  • 1 pound fresh shrimp (deshelled and deveined)
  • sliced 3 teaspoons sour cream
  • 2 tablespoons mayo
  • 2 cups shredded cabbage
  • 6 corn tortillas
  • 1 tablespoon butter garlic to taste
  • 1/2 cup shredded Colby Jack cheese

Method –  For the Sauce: In a small bowl, mix chili powder, mayo, and sour cream. Set aside. For the tacos: Brush shrimp with butter and garlic. Grill or pan fry over medium heat until shrimp is tender and pink throughout. Warm tortillas in a microwave or over the stove 2-3 minutes. Serve shrimp over tortillas with a teaspoon of the sauce. Finally garnish with jalapeno peppers, cabbage, cheese and fresh lime juice.
